[dropcap custom_class=”normal”] Moi moi and Pap is a Nigerian staple food, commonly eaten on Saturdays in many Nigerian homes. Moi moi is a delicious recipe that is highly rich in protein and other essential nutrients while pap on the other is a rich source of carbohydrate. I love eating moi moi and pap on Saturdays because I consider it as a sleeping medicine (lol). It makes you sleep off all the stress that you had gone through during work days.[/dropcap]

Moi moi served with pap can be considered as a balanced diet if well prepared and served with milk. The Yorubas call pap “Ogi” while the Igbos call it “Akamu”. This food combination is very easy to make and at the same very affordable. Moi moi can also be eaten separately  or accompanied with rice, garri and cornstarch (Eko in Yoruba or Agidi in Igbo).

The basic ingredients used for the preparation of this dish is beans and corn (maize). Beans is a plant protein full of energy-sustaining complex carbohydrates, folate and fibre and it also provides substantial amounts of calcium, iron, magnesium and potassium.  When considering the health benefits of beans, they should be known as “healthy people’s meat” instead of “poor people’s meat,” as they are often called.

Ingredients

The quantity of ingredients varies depending on the family size.

  • Beans
  • Eggs (optional)
  • Corned beef
  • Vegetable Oil
  • Chilli
  • Crayfish
  • Onions
  • Salt and Seasoning

What You Need For The Preparation

Source of heat, bowl, spoons, knife, blender or grinding machine, aluminum foil or plastic bowls or umar leaves.

Method Of Preparation

  • Pick, soak and wash beans to remove the coat.
  • Soak the washed beans in a bowl of water for smooth and easy blend.
  • Cook egg till done and slice into small pieces, then set aside.
  • Open and separate corned beef into small lumps (Optional).
  • Drain water from the beans, wash the onions, chilies, crayfish, then blend all together in a bowl.
  • Prepare about half a litre of warm water which will be used in mixing the moi moi.
  • Add warm water slowly and stir the mixture at the same time, once you get your consistency, stop adding water.
  • Add oil, salt and seasoning to taste ( or whatever you want to add to your moi moi).
  • Stir the mixture very well and start putting the mix in umar leave or aluminum foil or choice of your containers
  • Add some sliced egg and Corned beef pieces per umar leave or foil paper
  • Pad the base of a big pot and set the moi moi containers in the pot, add a small quantity of boiling water and start cooking.
  • Cover pot and steam for 45 – 60 minutes, check to make sure there’s still water in the pot, and topping up when necessary.
  • Once your moi moi is confirmed done, remove from heat and allow to cool. Unwrap from the umar leave or foil paper and serve with pap, milk and sugar.
