African Platter Map: Maakouda Batata (Moroccan Street Food)

Comments

Maakouda Batata are Moroccan potato fritters. They are very popular on the streets of Morocco where they might be eaten plain or as sandwich fillers. Very similar to cutlets, they can be served as an appetizer or side.

Maakouda Batata is traditionally prepared with mashed potatoes, It is usually mixed with spices and herbs, dipped in eggs and then deep fried in oil. As most street foods, it is quite cheap and easily accessible.
As much as fried food reminds me of calories and hours I’d have to spend running on the treadmill or doing jumping jacks, this looks like something I’d love to try. Is it something you’d like to try? Check out the recipe below…
Ingredients:
4 potatoes.
1 egg.
2 cloves of minced garlic.
1tbsp cumin.
½ tsp salt.
1 tsp paprika.
¼ tsp black pepper.
2 tbsp chopped parsley and coriander.
For frying:
1 whipped egg.
Some flour.
Oil.
Way of preparation:

  • Clean potatoes, peel and cut then boil them.
  • Drain the boiled potatoes and let them cool.
  • Mash the potatoes with a fork, add egg, parsley, coriander and spices then mix well.
  • Make small balls from the paste and press them a little by the palm of hand.
  • Dip the patties in egg then in flour.
  • Fry the patties in hot oil in both sides until they are golden brown.

Serve hot!
