African Platter Map: Melkert (Milk Tart From South Africa)

At first glance, I thought I had seen a huge shepherd’s pie or vanilla cake out of pan. I was wrong… Melkert in South Africa is commonly served as dessert, and although being a pie its recipe is similar with the popular pancakes or crepes.

I came across two different ways of making this, and it’s quite simple and straight forward too.

Ingredients

Directions (In an Oven)

  1. Preheat the oven to 190 degrees C. Then Coat your dish pie plate with vegetable oil/cooking spray.
  2. In your mixing bowl, mix the butter and sugar together until it’s smooth. Add your egg yolks and beat until light and fluffy. Sift in flour, baking powder and salt, and stir until well blended. Mix in your vanilla and milk.
  3. In a separate bowl, whip your egg whites to stiff peak. Fold into the batter. Pour into the prepared pie plate, and sprinkle cinnamon sugar over the top.
  4. Bake for 25 minutes in the preheated oven, reduce temperature to 165 degrees C. Bake for 25 to 30 minutes, and observe till the center is cooked through. Serve hot or cold.


OR
(In a pot)

  1. Heat 3 cups of milk to boiling point.
  2. Mix your remaining milk, flour, sugar, extracts, salt and egg yolks together and add to hot milk.
  3. Cook until very thick and remove from cooker/stove.
  4. Whisk egg whites till it gets to stiff peak and add to milk mixture after leaving for 5 minutes to cool from off the stove.
  5. Stir in your butter and add your mixture into a ready-made pie pan.
  6. Sprinkle the top with cinnamon sugar.
  7. Store in a fridge to cool and set.
